A proteolytic enzyme that cleaves pyroglutamate from the N-terminus of polypeptide chains. Useful in protein sequencing to unblock proteins and peptides with N-terminal pyroglutaryl residues. Specific activity: ≥10 units/mg protein. One unit is defined as the amount of enzyme that will hydrolyze 1 µmol of Pyr-pNA per min at 37°C, pH 7.0. Purity: ≥90% by SDS-PAGE.
